This is one of my favourite Christmas treats. Served at room temperature, the fish readily flakes - it needs only a cake slide to dish up. Topped with our fresh chimichurri it's completely delicious. This is Christmas in summer at it's very best.
Each side of salmon is around 1kg and will generously feed 8-10 adults.
